Pumpkin muffins

Autumn has a way of reminding me of home, the rolling hills, the whisper of the wind through the trees, the smell of something sweet baking in the oven. I grew up in the foothills of the Blue Ridge Mountains in Virginia, and though I now call California home, my heart still lingers among those hills. When I was little, my mom used to make pumpkin muffins every fall. The house would fill with that cozy scent of cinnamon and nutmeg, and we’d wait by the oven, trying to sneak one before they cooled. She always saved the first batch for breakfast the next morning, warm muffins with butter melting into the crumb and coffee brewing while the fog still rested over the mountains. Ingredients
For the muffin batter:1 ¾ cups all purpose flour, 1 tablespoon pumpkin spice, 1 teaspoon baking soda, ½ teaspoon salt, 1 (15 oz) can pumpkin puree, 1 cup granulated sugar, ½ cup packed brown sugar, 2 large eggs, ½ cup vegetable oil (or melted and cooled butter), 1 tablespoon vanilla extract
For the cream cheese swirl:8 oz cream cheese (room temperature), ¼ cup granulated sugar, 1 large egg yolk (room temperature), 2 teaspoons vanilla extract
Instructions
Preheat your oven to 375 °F. Line a muffin tin with paper liners.
In a medium bowl, whisk together the flour, pumpkin spice, baking soda, and salt. Set aside.
In a large bowl, whisk the pumpkin puree, granulated sugar, brown sugar, eggs, oil, and vanilla extract until smooth.
Slowly whisk the flour mixture into the wet mixture, just until combined.
Fill each muffin liner about three quarters full with the batter.
In another bowl, beat the cream cheese until smooth, then add sugar, egg yolk, and vanilla and beat until well combined.
Drop about one tablespoon of the cream cheese mixture onto each muffin and use a toothpick or the tip of a knife to gently swirl it into the batter.
Bake for 18 to 20 minutes, or until a toothpick inserted into the pumpkin part (not the cream cheese swirl) comes out clean or with just a few moist crumbs.
Let the muffins cool for about 10 minutes before serving warm, or cool completely and store.
Tips for Home Baking and Extra Comfort
Use room temperature eggs and cream cheese so everything mixes smoothly.Be gentle when mixing, as overworking the batter can make muffins tough.If you don’t have a toothpick or swirl tool, you can simply drop a dollop of the cream cheese mix into each muffin and leave it as a little pocket.For extra crunch, stir in chopped pecans or walnuts, or sprinkle pumpkin seeds on top before baking.These freeze well; wrap individually, freeze, and thaw in the fridge overnight so you always have a homemade treat ready.
